Prepare the Cauliflower
Cut the cauliflower into bite-sized florets and set aside.

Prepare the Smoker
Soak the mesquite wood chips in water for about 30 minutes. Drain and place them in a smoker box or directly on the coals of a grill.

Smoke the Cauliflower
Place the cauliflower florets on the grill rack over the smoker box and cover. Smoke for about 20 minutes until tender and infused with flavor.

Prepare the Batter
In a bowl, mix all-purpose flour, cornstarch, garlic powder, ginger powder, salt, and water to create a thick batter.

Coat and Fry
Dip the smoked cauliflower florets into the batter and ensure they are coated evenly. Heat oil in a pan and deep-fry the battered florets until golden and crispy. Drain on paper towels.

Add the fried cauliflower to the Manchurian sauce and toss to coat. Garnish with chopped spring onions and sesame seeds if desired. Serve hot.
