Cooking Instructions

  1. 1

    Prepare the Marinade

In a large bowl, combine yogurt, minced garlic, minced ginger, cumin powder, turmeric powder, chili powder, and salt. Add the chicken thighs and coat them thoroughly. Cover and refrigerate for at least 1 hour or overnight for best results.

  2. 2

    Cook the Onions

In a large pan, melt 2 tablespoons of butter over medium heat. Add the chopped onions and sauté until golden brown, about 8-10 minutes.

  3. 3

    Add the Spices

Add crushed cardamom pods to the onions and sauté for an additional 2 minutes until fragrant.

  4. 4

    Cook the Chicken

Add the marinated chicken to the pan and cook until browned on all sides, about 10 minutes.

  5. 5

Add Tomato Puree and Coconut Milk

Stir in the tomato puree and coconut milk, bringing the mixture to a gentle simmer. Cover and cook for 20-25 minutes, until the chicken is fully cooked and tender.

  6. 6

    Finish with Butter

Stir in the remaining 2 tablespoons of butter and adjust seasoning with salt if necessary. Cook for an additional 5 minutes.

  7. 7

    Serve

Garnish with chopped cilantro and serve hot with rice or naan.
