Directions

  1. 1

    Prepare Potatoes

Peel and dice the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and mash until smooth.

  2. 2

    Cook Turkey and Vegetables

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and minced garlic, cooking until the onion is translucent. Add the ground turkey and cook until browned. Season with salt and black pepper.

  3. 3

    Mix Ingredients

In a large bowl, combine the mashed potatoes, cooked turkey mixture, egg, and Parmesan cheese. Mix until well combined.

  4. 4

    Form Croquettes

Shape the mixture into small patties or croquettes. Each should be about 2-3 inches in diameter.

  5. 5

    Coat Croquettes

Dredge each croquette in breadcrumbs until fully coated.

  6. 6

    Fry Croquettes

In the same skillet, add the remaining olive oil over medium heat. Fry the croquettes for about 3-4 minutes on each side or until golden brown.

  7. 7

    Serve

Remove from the skillet and place on a paper towel to drain excess oil. Serve hot.
