    Trim excess fat from the brisket, leaving about 1/4 inch of fat for moisture and flavor.

    Season the Brisket

    In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and brown sugar. Rub the spice mixture all over the brisket and let it sit at room temperature for at least 1 hour or refrigerate overnight for more flavor.

    Prepare the Smoker

    Soak wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C). Add soaked wood chips to the smoker according to the manufacturer's instructions.
