    Marinate the Chicken

    In a large bowl, combine yogurt, lemon juice, ginger-garlic paste, turmeric, red chili powder, coriander powder, garam masala, and salt. Add the boneless chicken thighs and mix well to coat. Cover and refrigerate for at least 2 hours or overnight for best results.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). If using a charcoal smoker, soak wood chips (like hickory or apple) in water for about 30 minutes beforehand.

    Smoke the Chicken

    Once the smoker is ready, place the marinated chicken thighs on the grill grate. Add the soaked wood chips to the smoker box or directly onto the coals. Smoke the chicken for about 2-2.5 hours, or until the internal temperature reaches 165°F (74°C).

    Finish the Chicken

    Remove the chicken from the smoker and let it rest for about 10 minutes. Dice or slice the chicken as desired.
