Banana Pudding and Vanilla Wafers

    Make the Vanilla Wafers

    Preheat oven to 350°F (175°C). In a mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until combined. Drop tablespoon-sized amounts onto a baking sheet lined with parchment paper. Bake for 10-12 minutes until golden. Let cool.

    Prepare the Pudding

    In a saucepan over medium heat, combine milk, vanilla bean paste, and cornstarch. Stir continuously until the mixture thickens and begins to bubble. Remove from heat and let cool slightly. In a separate bowl, beat the eggs and gradually stir in a small amount of the hot milk mixture to temper the eggs, then pour back into the saucepan. Cook for another minute until the mixture thickens further, then remove from heat.

    Assemble the Banana Pudding

    Slice the ripe bananas and layer them in a serving dish. Pour half of the pudding over the bananas, then add a layer of vanilla wafers. Repeat with remaining bananas, pudding, and wafers. Whip heavy cream until soft peaks form and spread over the top. Refrigerate for at least 2 hours before serving.
