In a large brewing kettle, heat 15 liters of water to about 67°C (153°F). Add the pale malt and caramel malt, stirring continuously to avoid clumping. Maintain the temperature for about 60 minutes.

Mashing

After mashing, drain the liquid (wort) into a separate kettle. Then, sparge the grains by rinsing them with an additional 5 liters of hot water at about 75°C (167°F) to extract remaining sugars.

Sparging

Bring the wort to a rolling boil. Once boiling, add the bittering hops and boil for 60 minutes. In the last 10 minutes of the boil, add the aroma hops.

Once the boiling process is complete, cool the wort quickly to around 20°C (68°F) using a wort chiller.

Cooling

Transfer the cooled wort to a sanitized fermenter. Sprinkle the brewer's yeast on top of the wort, then seal the fermenter with an airlock.

Pitching Yeast

After fermentation (about 1-2 weeks), siphon the beer into sanitized bottles, leaving some space at the top. Cap the bottles and allow them to carbonate for another week.

In a small saucepan, combine equal parts sugar and water (1 cup each) and heat over medium heat until the sugar dissolves completely. Allow to cool and store in the refrigerator.
