Prepare the Hushpuppy Batter

In a large mixing bowl, combine the crawfish tails, cornmeal, flour, chopped green onions, buttermilk, egg, baking powder, salt, black pepper, and cayenne pepper. Mix until well combined, ensuring there are no dry spots.

Heat the Oil

In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the top, it's ready.

Fry the Hushpuppies

Using a spoon or small ice cream scoop, drop the batter into the hot oil, being careful not to overcrowd the pan. Fry until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Serve the hot hushpuppies with house-made remoulade on the side for dipping.
