Prepare the Apple Filling
In a large bowl, combine diced apples, sugar, cinnamon, nutmeg, pomegranate seeds, and apple cider. Mix well and let sit for 15 minutes.

Make the Pie Crust
In a food processor, pulse together flour, salt, and butter until the mixture resembles coarse crumbs. Gradually add ice water, pulsing until the dough comes together. Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Make the Ricotta Gelato
In a mixing bowl, combine ricotta cheese, heavy cream, and vanilla extract. Whip until smooth and creamy. Freeze for at least 2 hours before serving.

Prepare the Oat Crisp
In a bowl, mix oats, brown sugar, and melted butter. Spread on a baking sheet and bake at 350°F (175°C) for 15 minutes or until golden brown. Let cool.

Assemble the Hand Pies
Roll out one dough disk on a floured surface to about 1/8 inch thick. Cut into circles and fill each with a spoonful of the apple filling. Fold and seal the edges with a fork. Repeat with the second dough disk.

Place the hand pies on a baking sheet lined with parchment paper. Bake at 375°F (190°C) for 25-30 minutes or until golden brown.

Serve the warm hand pies drizzled with apple cider caramel, a scoop of ricotta gelato, and a sprinkle of oat crisp on top.
