    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until they are golden and crispy, about 15-20 minutes, stirring occasionally.

    Cook the Steak

    While the potatoes are cooking, season the sirloin steak with salt and black pepper. In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for a few minutes.

    Fry the Eggs

    In the same skillet used for the steak, reduce the heat to medium and add butter. Once melted, crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes.
