    Caramelize the Onions

    Heat olive oil in a skillet over medium heat. Add sliced onions and cook slowly, stirring occasionally, for about 20-25 minutes until they are golden brown and caramelized. Season with salt and black pepper to taste.

    Cook the Beef

    In the same skillet, increase heat to medium-high and add the shaved beef. Season with salt and black pepper. Cook for about 5-7 minutes until the beef is browned and cooked through.

    Prepare the Baguette

    Preheat the oven to 180°C (350°F). Slice the baguette in half lengthwise and toast it in the oven for about 5-7 minutes until lightly golden.

    Assemble the Sandwich

    On the toasted baguette, layer the cooked beef, followed by the caramelized onions. Top with slices of provolone cheese.

    Melt the Cheese

    Return the assembled baguette to the oven for another 5 minutes or until the provolone cheese has melted.

    Serve with Queso

    Remove from the oven, drizzle or serve with your house-made queso on the side. Cut into portions and enjoy!
