Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it's hot enough for baking the cakes.

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with cocoa powder or flour to prevent sticking. Place them on a baking sheet.

Making the Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second increments, stirring after each, until completely melted and smooth.

  2. 4

    Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly frothy.

  3. 5

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine. Add in the vanilla extract and stir until fully incorporated.

  4. 6

    Add Flour and Salt

Sift the all-purpose flour and salt into the chocolate mixture, folding gently until just combined. Be careful not to overmix.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake the Cakes

Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

  3. 9

    Rest and Serve

Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate. Serve immediately while warm, optionally dusted with powdered sugar and accompanied by vanilla ice cream and fresh berries.
