Calamari Preparation

    Prepare the Calamari

    In a large bowl, combine the cleaned and sliced calamari with buttermilk and let it marinate for at least 30 minutes.

    Mix the Dry Ingredients

    In another bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder until well combined.

    Coat the Calamari

    After marinating, remove the calamari from buttermilk, allowing excess to drip off. Dredge the calamari rings in the flour mixture, ensuring they are evenly coated.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Marinara Sauce Preparation

    Cook the Sauce

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes and Spices

    Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally.

    Finish the Sauce

    Once the sauce has thickened, stir in the chopped fresh basil and cook for another 2-3 minutes. Remove from heat.
