Cooking Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the broccoli, bell peppers, and zucchini. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
Add Tomatoes
Stir in the cherry tomatoes and cook for an additional 2 minutes until they are warmed through.
Combine with Pasta
Add the cooked pasta to the skillet with the vegetables. Pour in the reserved pasta water as needed to create a light sauce.
Mix in Pesto
Add your favorite pesto to the pasta and vegetables. Toss everything together until well combined. Season with salt and black pepper to taste.
Serve
Serve warm, garnished with additional pesto or grated Parmesan if desired.
