    Roast the Tomatoes

    Preheat the oven to 400°F (200°C). Cut the Roma tomatoes in half and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper. Roast in the oven for 25-30 minutes until caramelized.

    Sauté Aromatics

    In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent, about 5-7 minutes.

    Combine Ingredients

    Add the roasted tomatoes to the pot along with the vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, transfer the mixture to a blender and blend in batches.

    Add Cream and Seasoning

    Stir in the heavy cream, crushed red pepper flakes, and fresh basil leaves. Season with additional salt and pepper to taste. Heat through for another 5 minutes.

    Ladle the soup into bowls and garnish with extra basil leaves if desired. Serve hot.
