    Prepare the Bacon

    In a large pot, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside. Leave some bacon grease in the pot.

    Cook the Vegetables

    In the same pot with the bacon grease, add the chopped onion, celery, and carrot. Sauté for about 5 minutes until the vegetables are tender. Add minced garlic and cook for an additional minute.

    Add the Potatoes and Broth

    Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.

    Blend the Mixture

    Using an immersion blender, blend the chowder until smooth. If you prefer a chunkier texture, blend only half of the mixture.

    Stir in Dairy

    Add the milk, heavy cream, and cheddar cheese to the pot. Stir until the cheese is melted and the chowder is creamy.

    Season and Serve

    Season with salt and black pepper to taste. Serve hot, garnished with crumbled bacon and chopped green onions.
