Cook the Hashbrowns
In a skillet, heat the vegetable oil over medium-high heat. Add the frozen hashbrowns, season with salt and pepper, and cook until golden brown and crispy, about 8-10 minutes, flipping occasionally.

Cook the Eggs
While the hashbrowns are cooking, prepare the eggs to your preference (fried, poached, or scrambled).

Make the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks, lemon juice, and Dijon mustard. Place over a pot of simmering water, whisking constantly. Slowly drizzle in melted butter until the sauce thickens. Season with salt to taste.

Assemble the Poutine
On a plate, layer the crispy hashbrowns, followed by cheese curds, your choice of meat (Ropa Vieja, Pork, or Chicken), and top with the cooked egg. Finally, drizzle with the hollandaise sauce.
