Beef Marinade

Method

Prepare the Beef

1

Marinate the Beef

In a large bowl, combine the olive oil, cumin, oregano, paprika, salt, and black pepper. Add the beef flank steak and coat evenly. Cover and refrigerate for at least 1 hour, or overnight for better flavor.

2

Cook the Beef

In a large pot, heat a bit more olive oil over medium heat. Add the marinated beef and sear on all sides until browned. Remove the beef and set aside.

Make the Ropa Vieja

3

Sauté Vegetables

In the same pot, add chopped onions, bell pepper, and minced garlic. Sauté until the onions are translucent.

4

Simmer

Return the beef to the pot, add the bay leaves and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 2 hours, or until the beef is tender and shreds easily.

5

Shred the Beef

Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot, stir to combine with the vegetables, and cook for an additional 15 minutes.

Plate the Dish

Serve the Ropa Vieja over steamed rice with a side of your choice of small soup and a green salad.
