Gnocchi

Method

Preparation and Cooking

1

Make the Gnocchi Dough

In a large bowl, combine the ricotta cheese, egg, salt, and black pepper. Mix until smooth. Gradually add the flour, mixing until a soft dough forms. Be careful not to overwork the dough.

2

Shape the Gnocchi

Dust a clean surface with flour. Divide the dough into 4 pieces. Roll each piece into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces to form the gnocchi. You can use a fork to create ridges on each piece if desired.

3

Cook the Gnocchi

Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water. Cook until they float to the surface (about 2-3 minutes). Remove with a slotted spoon and set aside.

4

Prepare the Bolognese Sauce

In a separate pan, heat olive oil over medium heat. Add chopped onion, garlic, and ground meat (beef or pork) and cook until browned. Stir in crushed tomatoes, salt, and Italian herbs. Simmer for 15-20 minutes.

5

Serve

Toss the cooked gnocchi with the Bolognese sauce and serve warm, topped with freshly grated Parmesan cheese.
