Cook the Spaghetti

In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Prepare the Bacon

In a large skillet over medium heat, add the smoked bacon and cook until crispy. Remove from heat and set aside, leaving the rendered fat in the skillet.

Make the Creamy Sauce

In a bowl, whisk together the eggs, heavy cream, grated parmesan cheese, and black pepper until well combined.

Combine Everything

Return the skillet with bacon back to low heat. Add the drained spaghetti and toss to coat in the bacon fat. Gradually pour in the egg and cream mixture, stirring quickly to coat the pasta and create a creamy sauce. If the sauce is too thick, add reserved pasta water as needed.

Season and Serve

Taste and adjust seasoning with salt and more black pepper if desired. Serve immediately, garnished with additional parmesan cheese and black pepper.
