Chocolate Lava Cake

Melt the Chocolate and Butter

In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Melt them together over a double boiler or in the microwave until smooth. Allow to cool slightly.

Prepare the Batter

In a mixing bowl, whisk together granulated sugar, eggs, and egg yolks until well combined. Stir in the melted chocolate mixture and vanilla extract. Gently fold in the all-purpose flour and a pinch of salt until just combined.

Prepare Ramekins

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with cocoa powder, tapping out the excess.

Bake the Cakes

Divide the batter among the prepared ramekins. Bake for 12-14 minutes, or until the edges are firm but the center is soft. Remove from the oven and let sit for 1 minute.

Serve

Carefully invert each ramekin onto a plate, allowing the lava cake to release. Serve immediately with berry sauce and a scoop of vanilla gelato.

Prepare the Sauce

In a small saucepan over medium heat, combine mixed berries, granulated sugar, and lemon juice. Cook until the berries soften and the mixture begins to thicken, about 5-7 minutes. Remove from heat and allow to cool slightly.
