Prepare the Ingredients
Chop all the vegetables and set them aside. Beat the eggs in a small bowl.

Cook the Eggs
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add the bell pepper, broccoli, napa cabbage, carrots, corn, and snap peas. Stir-fry for about 5-7 minutes or until the vegetables are tender.

Combine Rice and Curry Paste
Add the cooked rice and yellow curry paste to the skillet with the vegetables. Stir well to combine and cook for an additional 3-4 minutes.
