Prepare the Pineapple
Cut the fresh pineapple into rings or wedges, removing the core. Pat dry with a paper towel.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold water until the batter is smooth and free of lumps.

Fry the Pineapple
In a deep skillet or fryer, heat the vegetable oil over medium-high heat. Dip the pineapple pieces into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Coat with Honey
In a small saucepan, gently heat the honey until it is warm and runny. Drizzle the warm honey over the fried pineapple pieces.

Assemble the Dish
Place the honey-coated fried pineapple on a serving plate and top with two scoops of your favorite ice cream.
