Method

Prepare the Fillings

  1. 1

    Prepare the Protein Filling

In a skillet over medium heat, cook ground beef or turkey until browned, if using. Drain excess fat. If using grilled chicken, ensure it is fully cooked and diced into small pieces. For the black beans, simply rinse and drain the canned beans.

  2. 2

    Prepare the Vegetables

Chop or dice the tomatoes, onions, and jalapeños as needed. Rinse the lettuce and shred it into bite-sized pieces for easy wrapping.

Assemble the Burritos

  1. 3

    Warm the Tortillas

In a dry skillet or microwave, warm the flour tortillas until they are pliable, about 30 seconds in the microwave or 1 minute on the skillet.

  2. 4

    Layer the Fillings

On each tortilla, spread 1/4 cup of refried beans, followed by 1/4 cup of cooked rice. Add 1/4 cup of the protein filling (if using), then layer on 1/4 cup of shredded cheese, followed by 1/4 cup of diced tomatoes, 1/4 cup of shredded lettuce, and as many sliced jalapeños as desired.

Wrap the Burritos

  1. 5

    Fold and Roll

To wrap the burrito, fold the sides of the tortilla inward over the filling, then roll the bottom of the tortilla up over the filling to create a sealed burrito. Place seam-side down on a plate.

  2. 6

    Repeat

Repeat the layering and wrapping process with the remaining tortillas and fillings.

Serve

  1. 7

    Add Toppings

Serve the burritos with sides of sour cream, guacamole, and salsa for dipping. Enjoy!
