Preparing the Fries

Cut and Soak Potatoes

Wash and peel the russet potatoes. Cut them into fry shapes, about 1/4 inch thick. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked fries and pat them dry with a clean towel. Carefully add the fries to the hot oil in batches and fry until golden and crispy, about 5-6 minutes per batch. Remove and drain on paper towels, then sprinkle with salt.

Marinate the Steak

In a mixing bowl, combine lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add the flank steak, ensuring it's well coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

Cook the Steak

Preheat a grill or skillet over high heat. Remove the steak from the marinade and cook for about 5-7 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.

Assembling the Fries

Layer the Ingredients

On a large serving platter or individual plates, layer the hot fries. Top with the sliced carne asada, then sprinkle shredded cheddar cheese on top. You can optionally place the fries under a broiler for a few minutes until the cheese is melted.

Add Toppings

Finish with dollops of sour cream and guacamole. Sprinkle chopped cilantro and sliced jalapeños over the top for added flavor and garnish.
