Prepare the Mushrooms
Preheat your oven to 375°F (190°C). Clean the mushrooms by wiping them with a damp cloth and carefully remove the stems. Set the caps aside and chop the stems finely.

Sauté the Mushroom Stems
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushroom stems and sauté for about 3-4 minutes until softened. Remove from heat and let cool slightly.

Make the Filling
In a mixing bowl, combine the cream cheese, shredded mozzarella cheese, sautéed mushroom stems, minced garlic (finely chop the garlic cloves), chopped parsley, chopped thyme, salt, black pepper, and grated Parmesan cheese. Mix until well combined and creamy.

Stuff the Mushrooms
Using a spoon or piping bag, fill each mushroom cap generously with the cheese mixture, pressing down slightly to ensure it's packed.

Bake the Stuffed Mushrooms
Arrange the stuffed mushrooms on a baking sheet. Drizzle the remaining tablespoon of olive oil over the tops. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

Remove from the oven and allow to cool for a few minutes before serving. Enjoy your delicious stuffed mushrooms warm!
