Pasta Preparation

Cook Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of the pasta water. Set aside.

Drain Spaghetti
Drain the spaghetti and return it to the pot, keeping it warm.
Sauce Preparation

Cook Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy, about 4-5 minutes. Remove from heat.

Prepare Sauce Mixture
In a bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and a pinch of salt until well combined.

Combine Pasta and Pancetta
Add the warm spaghetti to the skillet with pancetta, tossing to combine and coat the pasta with the fat.

Add Egg Mixture
Quickly pour the egg mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.

Plate the pasta and garnish with freshly chopped parsley and additional grated Parmesan cheese if desired. Serve immediately.
