Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

Prepare the Pancetta
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the diced pancetta and cook until it becomes crispy and golden, about 4-5 minutes. Remove from heat and set aside.

Mix the Egg and Cheese
In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add a generous amount of freshly ground black pepper.

Combine Spaghetti and Pancetta
Once the spaghetti is cooked and drained, add it directly to the skillet with the pancetta (including any rendered fat). Toss to combine.

Season and Serve
Taste and adjust seasoning with salt and more black pepper as desired. Serve immediately, garnished with additional Parmesan cheese and black pepper.
