Directions

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

  2. 2

    Prepare the Pancetta

While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the diced pancetta and cook until it becomes crispy and golden, about 4-5 minutes. Remove from heat and set aside.

  3. 3

    Mix the Egg and Cheese

In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add a generous amount of freshly ground black pepper.

  4. 4

    Combine Spaghetti and Pancetta

Once the spaghetti is cooked and drained, add it directly to the skillet with the pancetta (including any rendered fat). Toss to combine.

  5. 5

    Add Egg Mixture

Remove the skillet from the heat and quickly pour the egg and cheese mixture over the hot spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

  6. 6

    Season and Serve

Taste and adjust seasoning with salt and more black pepper as desired. Serve immediately, garnished with additional Parmesan cheese and black pepper.
