Panna Cotta Preparation

Bloom the Gelatin
In a small bowl, sprinkle gelatin over 3 tablespoons of cold water. Let it sit for about 5 minutes until it becomes spongy.

Combine Ingredients
In a medium saucepan, combine heavy cream, milk, sugar, and a pinch of salt. Heat over medium heat, stirring until the sugar dissolves and the mixture is hot (but not boiling).

Add Gelatin
Remove the saucepan from heat. Add the bloomed gelatin and vanilla extract, stirring until the gelatin is fully dissolved.

Pour into Molds
Pour the mixture into individual serving cups or molds. Refrigerate for at least 4 hours, or until set.
Berry Sauce Preparation

Cook the Berries
In a small saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook for about 5-7 minutes, stirring gently until the berries are softened and the sauce thickens slightly.

Cool the Sauce
Remove from heat and let the berry sauce cool to room temperature. You can also blend the sauce for a smoother texture, if desired.

Serve
Once the panna cotta has set, remove from the refrigerator and top with the berry sauce before serving.
