Preparation
- 1
Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1 inch. This ensures even cooking. Season both sides with salt and black pepper.
- 2
Dredge in Flour
Place the flour in a shallow dish. Dredge each chicken breast in flour until coated, shaking off any excess flour.
Cooking
- 3
Cook the Chicken
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside.
- 4
Make the Sauce
In the same skillet, add the remaining butter and minced garlic. Sauté for 30 seconds until fragrant. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
- 5
- 6
Combine Chicken and Sauce
Return the chicken to the skillet, spooning the sauce over the chicken. Cook for an additional 2 minutes to heat through.
- 7
Garnish
Remove from heat and garnish with chopped parsley before serving.
