Method
Preparing the Chicken
- 1
Season the Chicken
Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.
- 2
Prepare Breading Station
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese.
- 3
Bread the Chicken
Dredge each chicken breast in flour, shaking off excess. Dip into the egg, allowing excess to drip off, then coat in the breadcrumb and Parmesan mixture, pressing gently to adhere.
Cooking the Chicken
- 4
Fry the Chicken
Heat a skillet over medium heat and add enough oil to cover the bottom. Once hot, add the breaded chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through.
- 5
Prepare for Baking
Preheat the oven to 375°F (190°C). Once the chicken is cooked, place them in a baking dish.
Assembling the Dish
- 6
Add Marinara and Cheese
Spoon marinara sauce over each chicken breast, then top with shredded mozzarella cheese.
- 7
Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- 8
Garnish and Serve
Remove from the oven, sprinkle with fresh chopped basil, and serve hot.
