1. Marinate the Steak

In a bowl, combine the sirloin steak and adobo sauce. Ensure the steak is well-coated, then cover and marinate in the refrigerator for at least 1 hour.

2. Prepare Vegetables

While the steak is marinating, chop the poblano pepper, red bell pepper, and onion into bite-sized pieces. Set aside.

3. Cook Potatoes

Boil the potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool. Once cool, cut into quarters.

4. Grill the Steak and Vegetables

Preheat the grill to medium-high heat. Grill the marinated steak for about 4-5 minutes on each side for medium-rare. Remove from the grill and let rest. In the same grill, add the chopped vegetables and cherry tomatoes, grilling until slightly charred, about 5-7 minutes.

5. Mash Avocado

While the steak rests, mash the avocado in a bowl and season with salt and lime juice to taste.

6. Assemble the Dish

Slice the grilled steak thinly. On each flour tortilla, layer the charred vegetables, potatoes, avocado, sliced steak, cilantro, chipotle crema, and crumbled queso fresco. Roll up the tortilla and serve.
