Prepare the Pork
Preheat your oven to 300°F (150°C). In a bowl, mix the soy sauce, grated ginger, minced garlic, and sesame oil. Place the pork shoulder in a roasting pan and pour the marinade over it, ensuring it's well coated.

Slow Roast
Cover the pork with aluminum foil and roast in the preheated oven for about 4-5 hours, or until the pork is tender and easily shreds with a fork.

Make the Quick Kimchi Slaw
In a large bowl, combine the shredded cabbage, shredded carrots, rice vinegar, and sugar. Toss well to combine and let it sit for at least 30 minutes to allow the flavors to meld.

Assemble the Sliders
To assemble, place a generous amount of shredded pork on the bottom half of each slider roll. Top with a scoop of quick kimchi slaw and sprinkle with sesame seeds. Place the top half of the roll on and serve.
