Make the Churro Waffle Batter
In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. In another bowl, melt the butter and mix it with sugar until well combined. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract and milk. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Preheat the Waffle Iron
Preheat your waffle iron according to the manufacturer’s instructions.

Cook the Waffles
Lightly grease the waffle iron with cooking spray. Pour the batter into the preheated waffle iron, filling it according to the manufacturer's guidelines. Close the lid and cook until golden brown, about 4-5 minutes. Remove the waffles carefully and repeat with the remaining batter.

Coat in Cinnamon Sugar
In a small bowl, mix together 1/2 cup of sugar and 2 teaspoons of cinnamon. While the waffles are still warm, coat them generously in the cinnamon sugar mixture.
