1. Cook the Chicken
Season the chicken breast with salt, pepper, and any desired spices. Grill or sauté the chicken until fully cooked. Let it rest, then shred or chop into bite-sized pieces.
2. Sauté the Vegetables
In a skillet, add a little oil and sauté the diced poblano pepper, red bell pepper, and onion until softened, about 5-7 minutes.
3. Prepare the Black Bean Mash
In a bowl, mash the black beans with a fork or a potato masher until they are mostly smooth, adding a pinch of salt and pepper.
4. Assemble the Quesadilla
On one half of each tortilla, spread a layer of black bean mash, followed by the sautéed vegetables, shredded chicken, goat cheese, and queso Chihuahua. Fold the tortillas over.
5. Cook the Quesadilla
Heat a skillet over medium heat and cook each quesadilla until golden brown and the cheese has melted, about 3-4 minutes on each side.
6. Serve
Cut the quesadillas into wedges and serve with tomatillo salsa, chipotle crema, queso fresco, cilantro, and green onions on top.
