1. Prepare the Shrimp
In a bowl, toss the shrimp with ancho chili powder, olive oil, and a pinch of salt. Let it marinate for 15 minutes.
2. Grill the Shrimp
Heat a grill pan over medium-high heat. Grill the shrimp for 2-3 minutes on each side until they are pink and cooked through. Remove from heat and chop into smaller pieces.
3. Assemble the Quesadilla
On one half of each tortilla, spread a layer of pesto, sprinkle with goat cheese and queso Chihuahua, and top with the grilled shrimp. Fold the tortilla over to close.
4. Cook the Quesadilla
In the same grill pan, cook each quesadilla over medium heat for about 3-4 minutes on each side until the tortillas are golden brown and the cheese has melted.
5. Serve
Slice the quesadillas into wedges and serve with chipotle crema on the side.
