Prepare the Pork
Preheat your oven to 300°F (150°C). In a large bowl, season the pork shoulder with salt, black pepper, cumin, garlic powder, and onion powder. Rub the spices all over the meat.

Roast the Pork
Place the seasoned pork shoulder in a roasting pan. Cover the pan with aluminum foil and roast in the preheated oven for about 3-4 hours, or until the pork is tender and easily shredded.

Prepare the Salsa
While the pork is roasting, char the tomatillos and pineapple on a grill or in a broiler until slightly blackened. Blend the charred tomatillos, pineapple, and chopped orange bell pepper in a blender until smooth. Season with salt to taste.

Shred the Pork
Once the pork is done, remove it from the oven and let it rest for 15 minutes. Shred the pork with two forks and mix in some of the cooking juice for added flavor.

Serve
Serve the tacos immediately with lime wedges on the side.
