    In a bowl, mix together the soy sauce, grated ginger, gochujang, minced garlic, and sesame oil to create a marinade.

    Marinate the Beef

    Add the thinly sliced beef to the marinade and mix well. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Cook the Beef

    Heat a skillet or grill pan over medium-high heat. Add the marinated beef and cook for about 5-7 minutes, or until the beef is cooked through and slightly caramelized.

    Prepare the Quick Kimchi

    In a separate bowl, mix chopped napa cabbage or radish with a pinch of salt, gochugaru (Korean red pepper flakes), and a dash of vinegar. Let it sit while you prepare the rest.

    Warm the white corn tortillas in a dry skillet. Place the cooked beef onto each tortilla, add quick kimchi, fresh sliced chile, and top with chopped cilantro.
