Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into your desired fry shape, ensuring they are evenly sized for consistent cooking.

Soak the Fries
Place the cut fries in a large bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes them crispier.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the fries and pat them dry with paper towels. Carefully add them to the hot oil in small batches, frying for about 5-7 minutes until golden and crispy. Remove and drain on paper towels.

Dust with Ancho Chili Powder
While the fries are still hot, sprinkle them with ancho chili powder and salt. Toss to coat evenly.

Make the Sriracha Mayo Ketchup
In a small bowl, mix together the mayonnaise, Sriracha sauce, and ketchup until well combined. Adjust the Sriracha to taste.

Serve the ancho fries hot with the sriracha-mayo-ketchup on the side for dipping.
