Prepare the Calamari
In a bowl, toss the calamari rings with cornstarch, salt, and black pepper until evenly coated.

Make the Ginger & Soy Glaze
In a small saucepan, combine soy sauce, grated ginger, and minced garlic. Heat over medium heat until it starts to simmer, then remove from heat and set aside.

Cook the Calamari
In a large skillet, heat olive oil over medium-high heat. Add the coated calamari and cook for 2-3 minutes until they turn golden brown and crispy. Remove from the skillet and set aside.

Sauté the Peppers
In the same skillet, add diced bell peppers and sauté for 2-3 minutes until they are tender.

Combine and Serve
Add the cooked calamari back to the skillet with the sautéed peppers. Pour the ginger and soy glaze over the mixture, tossing gently to combine. Cook for another minute to heat through. Garnish with toasted sesame seeds and chopped green onions before serving.
