Grill Preparation
Preheat the grill to medium-high heat.

Roasting Potatoes
Toss the red potatoes with olive oil, thyme, salt, and pepper. Spread them on a baking sheet and roast in the oven at 425°F (220°C) for about 25-30 minutes until golden and crispy.

Prepare Haricots Verts
Blanch the haricots verts in boiling salted water for 3-4 minutes until tender-crisp. Drain and immediately plunge into ice water to stop cooking. Drain again before serving.

Make Beurre Blanc Sauce
In a saucepan, melt 1 cup of butter over medium heat. Sauté the minced shallots until translucent. Add the white wine and reduce by half. Stir in the heavy cream, basil, and salt, and whisk until smooth.

Plate the Dish
To serve, plate the grilled salmon alongside the roasted potatoes and haricots verts. Drizzle the beurre blanc sauce over the salmon and garnish with diced tomatoes and fresh basil leaves.
