Instructions for Preparing Ahi Tuna

    Prepare Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot and cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low and cover for 20 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

    Make Ginger-Cucumber Salad

    Julienne the cucumber and combine it with grated ginger in a bowl. Drizzle with soy sauce and toss to combine. Let it sit for 10 minutes to marinate.

    Prepare Sesame Crust

    Spread sesame seeds on a plate. Press the ahi tuna steak into the sesame seeds to coat both sides evenly.

    Sear the Tuna

    Heat sesame oil in a skillet over medium-high heat. Once hot, sear the tuna for about 1-2 minutes on each side, depending on how rare you want the center.

    Assemble the Dish

    Slice the seared tuna into thin strips. Serve on a bed of sushi rice with nori sheets on the side and ginger-cucumber salad.
