    Marinate the Steak

    In a medium bowl, combine soy sauce, grated ginger, minced garlic, sesame oil, and rice vinegar. Place the ribeye steak in a zip-top bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, preferably overnight.

    Prepare the Slaw

    In a large bowl, mix together the shredded cabbage, shredded carrots, cilantro, lime juice, salt, and pepper. Toss well to combine and set aside to marinate.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for 5 minutes before slicing thinly.

    Assemble the Tacos

    Warm the corn tortillas on the grill or in a skillet. Place slices of ribeye steak on each tortilla, top with the Asian slaw, and drizzle with Chinese mustard. Serve with lime wedges on the side.
