Pork Chop

Method

Cooking Instructions

  1. 1

    Prepare the Pork Chops

In a small bowl, mix fennel seeds, rosemary, salt, and black pepper. Rub this mixture over both sides of the pork chops.

  2. 2

    Sear the Pork Chops

In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until browned. Remove from skillet and set aside.

  3. 3

    Sauté the Spinach

In the same skillet, add spinach and sauté until wilted, about 2-3 minutes. Remove from skillet and keep warm.

  4. 4

    Cook the Grits

In a saucepan, bring chicken broth to a boil. Gradually stir in corn grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Stir in diced andouille sausage, cheddar cheese, and butter until well combined.

  5. 5

    Make the Orange Jus

In a small saucepan, bring orange juice to a simmer over medium heat and reduce by half. Add any juices from the resting pork chops if desired.

  6. 6

    Serve

Plate the pork chops with sautéed spinach and andouille-cheese grits. Drizzle with orange pork jus before serving.
