Prepare the Pork Chops
In a small bowl, mix fennel seeds, rosemary, salt, and black pepper. Rub this mixture over both sides of the pork chops.

Sear the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until browned. Remove from skillet and set aside.

Cook the Grits
In a saucepan, bring chicken broth to a boil. Gradually stir in corn grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Stir in diced andouille sausage, cheddar cheese, and butter until well combined.

Make the Orange Jus
In a small saucepan, bring orange juice to a simmer over medium heat and reduce by half. Add any juices from the resting pork chops if desired.
