Method
For the Cheesecake Filling
- 1
Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- 2
Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.
- 3
Make the Filling
In a large mixing bowl, beat together cream cheese and granulated sugar until smooth. Add sour cream, vanilla extract, and lemon juice, and mix until well combined.
- 4
Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just blended. Be careful not to overmix.
- 5
Bake the Cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for about 60-70 minutes, or until the center is set but still slightly jiggly.
- 6
Cool and Chill
Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour. Then, transfer to the refrigerator and chill for at least 4 hours, preferably overnight.
- 7
Serve
Once chilled, carefully remove the cheesecake from the springform pan. Slice and serve as desired.
