Creme Brûlée Ingredients

Method

Preparation Directions

  1. 1

    Prepare the Cream Mixture

In a medium saucepan, combine the heavy cream, granulated sugar, and the vanilla bean (split and scraped) or vanilla extract. Heat over medium heat until just simmering. Remove from heat and let it steep for 15 minutes.

  2. 2

    Whisk Egg Yolks

In a mixing bowl, whisk together the egg yolks until well combined and slightly thickened. Gradually add the warm cream mixture to the egg yolks, whisking continuously to temper the yolks and prevent them from cooking.

  3. 3

    Strain the Mixture

Strain the mixture through a fine mesh sieve into another bowl or measuring cup to remove any lumps or cooked egg bits.

  4. 4

    Bake the Custard

Preheat your oven to 325°F (160°C). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for about 30-35 minutes or until the edges are set but the center still jiggles slightly.

  5. 5

    Cool and Refrigerate

Remove the ramekins from the water bath and let them cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight.

  6. 6

    Caramelize the Sugar

Once chilled, sprinkle a thin layer of brown sugar over the top of each custard. Using a kitchen torch, caramelize the sugar until golden and crispy. Alternatively, you can place them under a broiler for a few minutes, watching closely to avoid burning.

  7. 7

    Serve

Let the caramelized sugar sit for a minute to harden. Serve immediately and enjoy your delicious crème brûlée!
