    Prepare the Mashed Potatoes

    Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and return them to the pot.

    Mash the Potatoes

    Add 4 tbsp of butter and 1 cup of milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

    Cook the Chicken

    Heat 2 tbsp of olive oil in a cast iron skillet over medium-high heat. Season the chicken breasts with salt and black pepper.

    Sear the Chicken

    Place the chicken breasts in the skillet and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.

    Make the Lemon-Pepper Demi

    In the same skillet, add the chicken broth and lemon juice. Scrape up any browned bits from the bottom of the skillet. Stir in 2 tbsp of butter until melted and smooth.

    Prepare the Haricot Vert

    Blanch the haricot vert in boiling salted water for 3-4 minutes, then transfer to ice water to stop the cooking. Drain and set aside.

    Plate the Dish

    On each plate, create a bed of mashed potatoes, top with the seared chicken, pour over the lemon-pepper demi, and serve with haricot vert on the side.
