    Cook the Vegetables

    In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, cooking until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

    Brown the Beef

    Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 8-10 minutes. Drain excess fat if necessary.

    Add the Tomatoes and Wine

    Stir in the crushed tomatoes, tomato paste, and red wine. Bring to a simmer.

    Season the Sauce

    Add the dried oregano, dried basil, salt, and black pepper. Reduce the heat to low and let the sauce simmer for at least 30 minutes, stirring occasionally.

    Cook the Pasta

    While the sauce simmers, cook the tagliatelle pasta according to package instructions. Drain and set aside.

    Combine and Serve

    Toss the cooked tagliatelle with the Bolognese sauce. Serve immediately, topped with shaved Parmesan cheese.
