Crispy Potatoes and Parmesan Fonduta

Method

Preparation Steps

  1. 1

    Prepare the Potatoes

Peel and dice the potatoes into small cubes. Rinse and soak them in cold water for 30 minutes to remove excess starch.

  2. 2

    Fry the Potatoes

Heat olive oil in a large skillet over medium-high heat. Drain the potatoes and pat them dry. Add the potatoes to the skillet and fry until golden and crispy, about 10-15 minutes. Season with salt and black pepper.

  3. 3

    Make the Parmesan Fonduta

In a saucepan, combine heavy cream and grated Parmesan cheese over low heat. Stir until the cheese melts and the mixture is smooth. Adjust seasoning if necessary.

  4. 4

    Prepare the Cured Egg Yolk

For the cured egg yolk, place the egg yolks in a small bowl and cover them with salt. Let them cure in the refrigerator for at least 4 hours or overnight. After curing, gently rinse and pat dry.

  5. 5

    Plate the Dish

On a serving plate, arrange the crispy potatoes, drizzle with the Parmesan fonduta, top with cured egg yolk, and sprinkle with chopped chives.
