Prepare Cannoli Shells

    Make the Dough

    In a mixing bowl, combine flour, sugar, cocoa powder, and cinnamon. Add melted butter, egg, white wine (or vinegar), and water. Knead until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Roll and Fry

    Roll out the dough thinly and cut into circles. Wrap around cannoli tubes and seal the edges with a bit of water. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare Filling

    Make the Cheesecake Filling

    In a mixing bowl, beat the softened cream cheese and sugar until smooth. Add vanilla extract and orange marmalade, mixing until well combined. In a separate bowl, whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.

    Fill the Cannoli

    Using a piping bag, fill the cooled cannoli shells with the vanilla cheesecake filling.

Serve

    Garnish and Serve

    Sprinkle the filled cannoli with chopped pistachios and serve with a scoop of blood orange sorbet on the side.
